4-day course, fish day - 4 päivän kurssi, kalapäivä



Fish and seafood day to be honest. Chef Matt was waiting for us and told us he'll be with us rest of the course. A morning snack from kitchen was sourdough toast with smoked mackerel paste on top. Delicious, even I wasn't a fan of mackerel. During that day I changed my mind but still won't buy mackerel in Finland as it's not fresh from sea. 


Tottapuhuen kala- ja merenelävä -päivä. Keittiömestari Matt odotti meitä ja kertoi olevansa meidän kanssa kurssin loppuun. Aamupalaksi meille tuotiin keittiöstä hapanjuurileivän päällä savumakrillitahnaa. Herkullista, vaikken ollutkaan makrillin ystävä. Tuon päivän aikana muutin mieleni, mutten tule ostamaan Suomessa makrillia, koska sitä ei saa tuoreena.

It was time for filleting some fish. Matt showed us how to fillet a mackerel, then we got one each and had a go. This was easy as mackerel is so called round fish and I've been filleting them earlier. Next one was tricky, again we were shown how to fillet lemon sole and then it was our turn. I didn't do too bad with it even it was first ever flatfish I've filleted. At this point I was really looking forward what we'll be cooking during the day. 

Oli fileerauksen aika. Matt näytti meille kuinka makrilli fileerataan, sitten saimme jokainen kalat ja teimme perässä. Tämä oli helppo juttu, koska makrilli on ns. pyöreä kala. Niitä ovat meidän kalamme täällä Suomessa ja olen fileerannut niitä aiemminkin. Seuraava kala oli haastava, meille näytettiin kuinka fileerataan pikkupääkampela, jossa on neljä filettä. Kaksi selkäpuolella ja kaksi vatsapuolella. Vaikka tämä olikin ensimmäinen ns. litteä kala, jonka fileerasin en onnistunut hullummin. Tässä vaiheessa odotin jo innoissani mitä mahdamme päivän aikana kokata.


Third fish to fillet was John DoryScary looking fish it was! The fish I've never heard of and everyone telling me that it's the fish from 'Finding Dory' film made me any wiser. Just couple of days ago I read about that film and now while writing this post I found out that film's premiere in Finland has been on Aug 26th. I had ask them spell it to me so I could google what is this fish. Found out the name in Finnish but haven't heard about it before. Peter's fish is another name for it. 


Kolmas kala fileerattavaksi oli pietarinkala. Pelottavan näköinen kala! Nimeä en ollut kuullut sen paremmin suomeksi kuin englanniksikaan ja tämän kalan kohdalla minun oli otettava google apuun. Pyysin tavaamaan englanninkielisen nimen, koska tieto että kyseessä on kala 'Doria etsimässä' -filmistä ei auttanut minua yhtään enempää. Eilen tuli eteeni kyläilyreissulla Aku Ankka, jossa oli juttu tuosta elokuvasta ja äsken huomasin, että se onkin ollut Suomessa ensi-illassa vasta 26.8. Tosin en varmaankaan olisi elokuvaa nähnyt, vaikka se olisi jo ollut elokuvateattereissa.

Matt prepared mackerel skeletons for us as a snack. They first cooked in salted water then rolled in a spiced flour mix and deep-fried. Tasty. All other leftovers of fish was cooked to a fish stock so nothing was wasted. Two crabs were brought to table. Matt showed how to kill it with a big nail and a hammer. No, they were not thrown to boiling water alive. They taken to kitchen to be cooked for us. Time to cook us a lunch. Matt told us how to know that mussel is alive and fit for cooking then we prepared the meal after he had shown us how. It was lemon sole, potato and mussels in paper parcel in the oven. Very delicious meal it was. We also got some smoked mussels.

Matt teki meille makrillinselkäruodoista herkkupalan. Ensin ne keitettiin suolatussa vedessä, sitten kieritettiin maustetussa jauhoseoksessa ja sitten uppopaistetiin. Maukkaita, eikä mitään jäänyt kurkkuun. Kaikki muista fileerauksesta yli jääneistä kalojen osista keitettiin kalaliemi, mitään ei hukattu. Kaksi taskurapua tuotiin pöydälle ja Matt näytti kuinka ne tapetaan isolla naulalla ja vasaralla. Niitä ei heitetty kiehuvaan veteen elävänä. Nämä ravut vietiin keittiöön, jossa ne keitettiin meille. Oli aika valmistaa lounas. Se oli pikkupääkampelaa, perunaa ja sinisimpukoita kypsennettynä paperikäärössä uunissa. Saimme myös savustettuja sinisimpukoita. 

When the crabs were cooked Matt showed us to get the delicious meat out of them. No wonder crab sandwiches are so expensive. We also go crab on a toast a snack sometime mid-afternoon. We had cured some mackerel in the morning and a fillet each was taken to be smoked. Meanwhile we cooked  a warm courgette salad as a sidedish and smoked mackerel was served with herb mayonnaise we made on veg day.

Kun taskuravut oli keitetty, Matt näytti kuinka niistä saadaan liha pois. Ei ihme, että taskurapuvoileivät ovat kalliita. Saimme taskurapua paahtoleivän päällä jossain vaiheessa iltapäivällä. Olimme aamulla suolanneet kalaa ja makrillifileet vietiin savustettavaksi. Sillä välin teimme lämpimän kesäkurpitsasalaatin sen rinnalle ja annos tarjoiltiin kasvispäivänä tehdyn yrttimajoneesin kera.

One dish to go, believe or not. We started to cooked the dinner! It was something I hadn't done before. To cook fish in bacon fat that is. Bit of surf & turf said Matt. We really cooked bit of River Cottage bacon on pan first and added veg. John Dory fillets were put among other ingredients and cooked until done. It so yummy! I couldn't believe it. 

Yksi ateria jäljellä, uskokaa tai älkää. Aloimme valmistamaan päivällistä. Se oli jotain, mitä en ollut tehnyt ennen. Kalan kypsentämistä pekonin rasvassa siis. Hieman surf&turf'ia sanoi Matt. Saimme palat River Cottagen omaa pekonia ja paistelimme sitä pannulla, kunnes rasva irtosi. Sekaan kasvikset ja jonkun ajan kuluttua pietarinkalafileet. Olipa herkullista! En olisi uskonut.

To end the day we got a dessert from kitchen. Meringue, fennel & honey ice cream and mixed fruit. I could hardly eat it but it was so great finish for the fish & seafood day. You couldn't leave that, could you? 

Saimme päivän päätteeksi jälkiruoan keittiöstä. Marenkia, fenkoli-hunajajäätelöä ja marjasekoitus. Hädin tuskin sain sen syötyä, mutta se oli niin mahtava päätös kala & mereneläväpäivälle. Olisitko sinä voinut jättää syömättä? 

I had been cooking next to Charlotte for two days and she kindly offered me a lift to my lodgings. With full stomach I was more than happy to accept it. Thank you so much. Not walking back I had both time and strength to visit Lyme Regis in the evening. I had a nice walk there along seafront.

Olin kokannut kaksi päivää Charlotte ja hän tarjosi minulle kyydin lähelle majapaikkaani. Täydellä vatsan kera olin enemmän kuin onnellinen hyväksyessäni tarjouksen. Paljon kiitoksia. Koska en kävellyt takaisin, ehdin ja jaksoin poiketa Lyme Regisiin illaksi. Kävelin siellä pitkin merenrantaa.

4 day course, veggies - 4 päivän kurssi, kasvikset


My trip to England wasn't very easy this time. My plane was due to depart at 8.10 from Helsinki on previous day the course started. At arrival to airport just past 6 am I found out that plane is delayed and is estimated 15.05. Well it took an hour more. Finally to Gatwick airport where the luggage took ages to arrive. Thank goodness, the trains were running late at Gatwick and I rushed to train towards London. By the time I got to Clapham Junction I thought I had missed the 18.27 train towards Axminster by couple of minutes. The train from London Waterloo was late too and I just managed to squeeze my inside the leaving train. Yes, I know you shouldn't do that. 

Matkani Englantiin ei ollut kovin helppo tällä kertaa. Koneeni piti lähteä Helsingistä klo 8.10 päivää ennen kurssin alkua. Saapuessani lentokentälle pian kuuden jälkeen aamulla sain selville, että koneen lähtö myöhästyy ja sen on arvioitu lähtevän klo 15.05. No, siihen tuli vielä tunti lisää. Kun viimein pääsin Gatwickiin, laukkujen tulo kesti ikuisuuden. Luojan kiitos junatkin olivat myöhässä ja syöksyin junaan kohti Lontoota. Siihen mennessä kun juna oli Clapham Junctionissa ajattelin, että olen myöhästynyt parilla minuutilla 18.27 Axminsteriin lähtevästä junasta. Myös juna Lontoon Waterloo -asemalta oli myöhässä ja sain survottua itseni junaan ovien sulkeutuessa. Kyllä, tiedän ettei niin pitäisi tehdä.

The train was full so there wasn't any chance to fall should something happen. Before Salisbury the conductor told me to move forward as just four carriages will continue to Exeter and I should be in that part of the train and myself place to sit there. I booked a taxi to Axminster station to take me to my lodgings. It was dark by the time I got there and sitting in taxi I couldn't see anything. It really is rural area. By the time I got to Nettle Bank B&B I was ready to got to bed. I had been up for 21 hours of which some 18 hours travelling (sort of). 

Juna oli täynnä, joten ei ollut vaaraa kaatua seistessä, jos jotain sattuisi. Ennen Salisburya konduktööri kertoi minulle, että minun tulisi siirtyä junassa eteenpäin, sillä vain neljä vaunua jatkaa Exeteriä kohti. Minun tulisi olla siinä osassa junaa ja löytäisin sieltä myös istumapaikan. Tilasin taksin Axminsterin asemalle, jotta pääsen majapaikkaani. Oli pimeää päästessäni sinne ja taksissa istuessani en nähnyt mitään. Se on todella maaseutua. Päästessäni Nettle Bank B&B:n olin ollut hereillä 21 tuntia ja siitä matkustanut (niin sanotusti) 18 tuntia.


That's all for my trip. I arrived to River Cottage HQ car park next morning to find the tractor nearly full. Welcoming arrival to the kitchen after rather bumpy but fun ride down to the valley. I was ever so pleased to find out chef Gill Meller there to teach us on veg day! We were given a morning snack of scrambled eggs and tomatoes from kitchen to start with.


Siinä kaikki matkastani. Saavuin River Cottagen päämajan parkkipaikalla seuraavana aamuna ja löysin sieltä traktorin lavan lähes täynnä. Minut toivotettiin tervetulleeksi ja melko kuoppaisen, mutta hauskan matkan laaksoon jälkeen olin erittäin iloisesti yllättynyt, että keittiömestari Gill Meller oli vastaanottamassa meidät ja opetti meidä kasvispäivänä. Saimme aamupalaksi munakokkelia ja tomaatteja keittiöstä. 


After welcoming speech we were taken for a tour to the garden and polytunnels. Our guide for this tour was gardener Jim Budden. We had bit longer tour as we had so many questions to ask while walking around. We also had to greet the pigs while there. For me there were many unknown or unseen varieties of beans and tomatoes growing. The garden behind the Park Farm building was divided if four sections to be able to use four-year rotation for healthier and plants and less pests. River Cottage is a organic farm where no pesticides is used.



Tervetuliaspuheen jälkeen edessä oli kierros puutarhassa ja kasvutunneleissa. Oppaamme oli puutarhuri Jim Bedden. Meidän kierros kesti pidempään kuin oli suunniteltu, koska meillä oli niin paljon kysymyksiä kulkiessamme siellä. Siellä kasvoi muutamia tai tuntemattomia lajikkeita pavuista ja tomaateita. Kävimme myös tervehtimässä possuja ohikulkiessamme. Puutarha vanhan Park Farm päärakennuksen takana oli jaettu neljään osaan vuoroviljelyä varten. Tämä tuottaa paremmat olosuhteet terveemmille kasveille ja vähentää tuholaisia. River Cottage on luomutila, jossa ei käytetä torjunta-aineita. 




By the time we got back to kitchen it was lots of cooking to do. First Gill told and showed us what to do and then we made everything ourselves. The very first thing was to prepare labneh for dinner. Next was to prepare lunch. I
t was salad with kale, crisp apple and celeriac (for me Gill gave some baby fennel instead of latter as I'm allergic to it) and nuts. We shall have recipes by email at some point. I was very hungry by that time and I really enjoyed this salad.

Palatessamme keittiöön oli aika alkaa kokata. Homma meni niin, että Gill näytti ja kertoi mitä meidän täytyy tehdä ja sitten kävimme itse hommiin. Ihan ensin teimme labneh-juustoa päivällistä varten. Sitten oli vuorossa lounassalaatin valmistelu. Siinä oli lehtikaalia, rapeaa omenaa, juuriselleriä (minä allergisena sain tämän tilalle nuorta fenkolia) ja pähkinöitä. Me tulemme saamaan reseptit sähköpostilla jossain vaiheessa. Olin tosi nälkäinen siinä vaiheessa, kun pääsimme syömään ja nautin tästä salaatista erittäin paljon.

Next we made herb mayonnaise for the fish day. It was time to start preparing for our dinner. First we did pastry for the main course. While it was resting in fridge we prepared the filling of banana shallots. For the starter it was  a warm salad with spiced baby carrots, kale crisps and spiced seeds on top of labneh. Served with RC sourdough bread from kitchen.

Seuraavaksi teimme yrttimajoneesin kalapäivää varten. Sitten oli vuorossa päivällisen valmistelu. Ensin teimme piiraspohjan pääruokaa varten. Sen jäähtyessä jääkaapissa haudutimme banaanishalottisipulit täytteeksi. Alkupalana oli lämmin salaatti mausteisista pikkuporkkanoista, lehtikaalisipsejä ja maustettuja siemeniä labneh-juuston päällä. Tarjolla oli RC:n hapanjuurileipää keittiöstä.

At some point the tarte tatin of banana shallots had gone to oven in a small cast iron pan and we had that as a main course. I managed to eat 1/3 of it! It wasn't wasted, I took to my B&B's freezer to take home to. 

Jossain välissä banaanishalotti keikauspiiras oli saatu uuniin pienessä valurautapannussa. Sen söimme päivällisen pääruokana. Kykenin syömään 1/3 siitä. Ei se hukkaan mennyt, vein sen majapaikkani pakastimeen, jotta saan sen kotiinviemisiksi.

Last dish of the day was dessert of plum macarons. It was spiced with cardamom which for some seemed to be bit exotic but me as a Finn it very familiar. It was served with Chantilly cream from kitchen. I haven't had that good whippet cream before, I really don't normally like it. I got an answer for why it was so tasty next day when I asked of fat percentage of the double cream. It's 60%! No wonder... our whipping cream in Finland is 38%.

Päivän viimeinen annos oli jälkiruoka, luumumacaronit. Ne oli maustettu kardemummalla, joka näytti olevan joillekin hieman eksoottinen, mutta suomalaiselle tuo maku on hyvin tuttu. Ne tarjottiin vaniljalla maustetun kermavaahdon kera. En ole ikinä maistanut niin hyvää kermavaahtoa, itse asiassa en erityisesti pidä siitä. Seuraavana päivänä selvisi syy siihen, miksi se oli niin hyvää. Kysyin kerman rasvaprosenttia. Se on 60! Ei ihme... meillä Suomessa kuohu- tai vispikerman rasvaprosentti on 38.

After all this cooking and eating I walked back to my B&B. Long and winding road, up and down. It looked so much easier looking at the map, took me an nearly an hour.  By the time I got there I was exhausted! What a great day it has been.

Kaiken tämän kokkaamisen ja syömisen jälkeen kävelin takaisin majapaikkaani. Pitkä ja mutkikas tie, ylös alas. Se näytti kartalla paljon helpommalta, matka kesti melkein tunnin. Perille päästyäni olin ihan puhki. Mahtava päivä oli takana!

River Cottage HQ is calling - River Cottage päämaja kutsuu


I started this blog nearly 4 years ago after I got my pre-ordered copy of the book. It was tough time then, my little brother was seriously ill and died after couple of days after the first post. Cooking and blogging was my way to survive. I have been using baking and cooking as a therapy all my life. It makes you forget the pain, what ever the reason for it is.  

As you can find out, my post eventually became less often. Time heals, not matter how cliché that is.  I still miss my brother a lot, good food was near to his heart too. 

There’s also other reasons for not to cook all recipes as the ingredients are not locally available and I don’t see it worth of buying for example fish imported from far away just to do the post. My allergies is one thing, unfortunately during the years I’ve managed to get more of those.

Aloitin tämän blogin lähes neljä vuotta sitten, saatuani käsiini ennakkotilaamani kopion kirjasta. Se oli rankkaa aikaa, pikkuveljeni oli vakavasti sairas ja kuoli pari päivää ensimmäisen blogitekstini jälkeen. Ruuanlaitto ja bloggaaminen oli tapani selviytyä. Olen käyttänyt leipomista ja kokkaamista terapiana koko elämäni ajan. Se saa sinut unohtamaan kivun, oli sen syy mikä hyvänsä. 

Kuten huomaatte, blogitekstit harvenivat. Aika parantaa, niin kliseeltä kuin se kuulostaakin. Ikävöin yhä veljeäni, hänellekin hyvä ruoka oli lähellä sydäntä.

On myös toisia syitä, jonka takia en ole kokannut kaikkia reseptejä kirjasta. Raaka-aineita ei ole paikallisesti saatavilla enkä näe syytä miksi ostaisin esimerkiksi kaukaa tuotua kalaa, vain saadakseni taas yhden tekstin tehtyä. Allergiani ovat yksi syy, niitä olen valitettavasti saanut lisää vuosien varrella.

I’m going to end this blog to the reports of my four days course at River Cottage HQ. It’s been my dream for few years and will be true within few days.

Aion päättää tämän blogini kirjoittamalla neljän päivän kurssista River Cottagen ”päämajassa”. Se on ollut haaveeni muutaman vuoden ajan ja se toteutuu muutaman päivän kuluttua.
