Ham, squash, marmalade - Kinkku, kurpitsa, marmeladi


Another recipe where I used Benjami's pork. I don't like orange marmalade but I bravely cooked this dish with it. Hugh writes in his book that this might sound little odd, well for me it was more than little. Ham glazed with pineapple is something I like.  I used butternut squash for it and made smaller portion for two of us. I wish I had cooked full size. I was delighted with taste! 

Seuraava resepti, johon käytin Benjamin possua. En pidä appelsiinimarmeladista, mutta rohkeasti lähdin valmistamaan tätä ateriaa. Kirjassaan Hugh kirjoittaa, että tämä voi kuulostaa hieman omituiselta, no minusta se kuulosti enemmänkin kummallista. Ananaksella glaseeratusta kinkusta pidän. Käytin myskikurpitsaa tähän ja tein pienemmän annoksen meille kahdelle. Toivon, että olisin tehnyt täyden satsin. Olipa maukasta!

I found recipe for you here, Channel4 Scrapbook. Mine looks again totally different than in books photo which is same as in this link. Never mind, taste was excellent. I used thick cut marmalade. Bittersweet taste of marmalade was great addition to both ham and squash. 

Löysin teille (englanninkielisen) reseptin täältä, Channel4:n leikekirjasta. Minun tekeleeni näyttää taas kerran aivan muulta kuin kirjan kuva, sama joka on tässä linkissä. Ei sen väliä, maku oli erinomainen. Käytin karkeaa appelsiinimarmeladia. Sen happamanmakea maku oli mahtava lisä niin kinkulle kuin kurpitsallekin.

Ham, potatoes, parsley - Kinkku, perunat, persilja


This week my favourite butcher, Benjamin Maatilatori, opened a shop in Lahti. Off I went shopping straight away being happy with no need to drive 100 km to get excellent quality pork. One ham hock and couple of chops was in my shopping bag as I got home. 

Tällä viikolla suosikkilihakauppiaani, Benjamin Maatilatori, avasi myymälän Lahdessa. Menin heti ostoksille iloisena, ettei enää tarvitse ajella 100 kilometriä erinomaisen possun takia. Kotiin lähdin kassissa possun potka ja pari kyljystä.

I found the recipe from Telegraph website. I put ham hock to brine for few days before cooking it. Cooking ham yourself takes just time, no need to watch it. Meanwhile you can do other housework like I did. Result was tasty and filling salad. I need to remember after Chrismas and use leftover ham. 

Löysin reseptin tällä kertaa Telegraphin nettisivuilta. Laitoin possun potkan muutamaksi päiväksi suolaliemeen ennen sen keittämistä. Potkan keittäminen itse ei vie aikaasi, ei sitä tarvitse vahtia. Sen kypsyessä on hyvin aikaa tehdä muita kotihommia. Tulos oli maukas ja täyttävä salaatti. Tämä täytyy muistaa joulun jälkeen ja käyttää kinkun jämiä.

Carrots, almonds - Porkkanat, mantelit


As you can guess from title I haven't used one of ingredients. In the book the third is cumin. And I hate it like I hate caraway. Behind that there's childhood trauma with Ruutunäkki, caraway crisp bread. Since that I haven't eaten it. And that's very long time.

Kuten otsikosta huomaatte, en ole käyttänyt yhtä kolmesta. Kirjassa kolmas on jeera. Inhoan sitä kuten kuminaakin. Inhon takana on trauma lapsuudesta koskien Ruutunäkkiä, kuminalla maustettua näkkileipää. Sen jälkeen en ole syönyt kuminaa. Siitä on hyvin pitkä aika.

This is simple side dish. I used finger sized carrots. Making this just for two I didn't need many. Scrub and trim carrots, cook them in salted water for about 5 minutes. Leave to cool. Meanwhile toast almonds a little. Chop them a bit. Pour some olive oil onto carrots, season with salt & pepper and add chopped almonds. Serve. New season carrots are lovely.

Tämä on helppo lisäke. Käytin sormenpaksuisia porkkanoita. Tein tämän vain kahdelle, joten niitä ei monta tarvittu. Harjaa ja siisti porkkanat, keitä niitä viitisen minuuttia suolalla maustetussa vedessä. Kaada vesi pois ja anna jäähtyä. Porkkanoiden kiehuessa paahda manteleita paistinpannulla, älä polta. Anna niiden jäähtyä hetki ja hakkaa pienemmäksi joko veitsellä tai käytä morttelia. Kaada porkkanoiden päälle hieman oliiviöljyä, mausta suolalla ja pippurilla. Lisää mantelit ja tarjoile. Uuden sadon porkkanat ovat taivaallisia.

Apple, orange, lemon - Omena, appelsiini, sitruuna


Yes, it's been a pudding weekend. I've been picking windfall under apple trees this week, so it was time to cook them someway. Leafing through the book I found this recipe. 

Nyt on ollut jälkiruokaviikonloppu. Olen kerännyt pudokkaita omenapuiden alta pitkin viikkoa ja niistä täytyi jotain tehdä. Selasin kirjaa ja löysin tämän tekemättömän reseptin.

You need about 1 kg of apples, one orange, one lemon and 50 g of sugar to make this delicious compote. In his book Hugh suggests Bramleys, we don't have them here in Finland. I used windfalls of all our trees. Grate half of orange's peel and half of lemon's peel. Squeeze juices from both and put them into saucepan along grated peel. Peel and core apple and slice them into juice and add sugar. 

Tarvitsen noin kilon omenoita, appelsiinin ja sitruunan sekä 50 g sokeria tähän herkulliseen hillokkeeseen. Kirjassaan Hugh suosittelee Bramley-lajiketta, mutta meillä täällä Suomessa ei sellainen kasva. Käytin siis kaikkien omenapuidemme pudokkaita tähän. Raasta puolikkaan appelsiinin ja puolikkaan sitruunan kuori. Purista mehut molemmista hedelmistä. Laita mehu ja kuoriraasteet kattilaan. Kuori ja pilko omenat kattilaan. Lisää sokeri. 

Bring to boil and cook for 20 minutes. Stir once in while. You should get tender apples with some chunks. Add sugar if needed, I added about 25 g. Those raw apples were so sour. Let it cool. Serve with crumble, yoghurt or quark. We had it with crumble I made yesterday. Flavours of both orange and lemon came up nicely. I will make more of this later in the autumn, delicious & fresh!

Kuumenna kiehuvaksi ja keitä hiljalleen 20 minuuttia. Sekoita välillä. Hillokkeessa tulee olla hieman sattumia, ei tasaista sosetta. Maista ja lisää sokeria tarpeen mukaan. Minä lisäsin noin 25 g, raa'at omenat olivat vielä happamia. Anna jäähtyä. Tarjoile muruseoksen, jukurtin tai rahkan kera.  Me söimme eilen tehdyn muruseoksen kera. Sekä appelsiinin että omenan maut tulivat hienosti esiin. Tätä teen lisää myöhemmin syksyllä, herkullista ja raikasta!

Plums, crumble, ice cream - Luumut, murut, jäätelö


Pudding time! We haven't got plums in our garden at the moment so I had to buy some. Last year last of our plum trees died. We are about to get couple of trees, hopefully planting them this year. Skoroplodnaja will be on of them definately. We had one in our garden when we moved in but it was planted at the very corner of the greenhouse and it didn't manage there. We were able to taste them, ever so delicious!

Jälkiruoan aika! Meillä ei ole tällä hetkellä luumupuita puutarhassamme, joten täytyi ostaa niitä kaupasta. Viime vuonna kuoli viimeinen luumupuistamme. Olemme hankkimassa pari puuta, toivottavasti vielä tänä vuonna. Skoroplodnaja on ehdottomasti toinen niistä ja sille sopiva pölytyskaveri. Puutarhassa oli sellainen kun aikoinaan muutimme tähän, mutta se oli istutettu aivan kasvihuoneen kulmalle, eikä se menestynyt siinä. Kerran pääsimme maistamaan niitä luumuja, niin herkullisia ja mehukkaita!

But back to this pudding. Start with making crumble. Mix 200 g plain flour, 200 g butter, 150 g demerara sugar and 100 g oatmeal together until you have a crumble. Put onto baking tray and bake in 175C oven for about 30 minutes turning around halfway. Let cool. You'll have more crumble than you need to this dish so save rest to air tight tin and use with yoghurt/quark or other puds.

Mutta takaisin tähän jälkiruokaan. Aloita muruseoksesta. Sekoita 200 g vehnäjauhoja, 200 g voita, 150 g ruokosokeria ja 100 g kaurahiutaleita yhteen, kunnes sinulla on murumainen seos. Levitä seos paperoidulle uunipellille ja paista 30 minuuttia 175-asteisessa uunissa. Käännä puolivälissä lastalla. Anna jäähtyä. Annoksesta tulee enemmän kuin tähän menee, joten laita loput peltirasiaan ja käytä jukurtin/rahkan tai muiden jälkiruokien kera.

Meanwhile butter oven dish for plums. Halve 8 plums and take off the stones. Put them on oven dish, sprinkle some demerara sugar and add tiny knob of butter on each halve. Roast in 200C oven for 20 minutes. Let cool for a while and serve with crumble and ice cream. Enjoy!

Tällä välin voitele uunivuoka luumuja varten. Halkaise 8 luumua ja poista kivet. Laita luumut uunivuokaan, ripottele päälle hieman ruokosokeria ja pienen pieni nokare voita. Paahda 200-asteisessa uunissa 20 minuuttia. Anna jäähtyä hetkinen ja tarjoile muruseoksen ja jäätelön kera. Nauti!
